Spicy Rice with Piri Piri Chicken Thighs

A very quick and easy recipe which is great for meal prepping or just as a nice healthy evening meal.

Ingredients 

7 Boneless Chicken Thighs 

2 Peppers

1/2 Bunch of Spring Onions

2 Tbsp Tomato Puree 

Piri Piri Fit Flavour (add as much as you like!!!) available here

250g Boiled Rice 

Directions

1. Finley chop red and green peppers and spring onions 

2. Score chicken thighs to allow flavours to be fully absorbed 

(you can choose to marinade for 24 hours for a more intense flavour)

3. Drizzle olive oil over chicken thighs and sprinkle over Piri Piri Fit Flavour 

4. Pan fry thighs until golden brown 

5. Pan fry pepper and onions until slightly brown and soft  

6. Add puree and mix in 

7. Add Boiled rice 

8. Serve
